Star Anise Illicium verum is as beautiful as it is delicious. Reminiscent of a licorice taste, star anise has many culinary uses and also makes a wonderful stand alone tea, or can be used in blends. Naturally sweet, light bodied, and low astringency, star anise pairs well with licorice root, ginger, clove, peppercorn, cinnamon, full bodied coffee, black tea, and many savory and sweet culinary dishes. Star Anise is also full of bioflavonoids and polyphenols, and has been used medicinally for thousands of years in traditional Chinese medicine. Currently, star anise is the primary source of shikimic acid used for pharmaceutical product development in anti-viral drugs used to fight influenza. It is also rich source of the flavonoid, anethole. This flavor compound is responsible for the spice’s characteristic taste and offers powerful anti-fungal benefits. Star anise is also great for soothing upset stomachs and assisting in digestion.

Brewing Instructions- Bring 1 1/2-2 C of water to 195°, add 2 whole pods or break/crush, remove from heat and let steep for 5-10 minutes. For added flavor, use one cinnamon stick, may lightly sweeten with honey.
